  • 1/2 cup shredded mozzarella can swap with provolone or pepper jack
  • 1/4 cup chopped sun-dried tomatoes use fresh when in season
  • handful sliced olives any variety like Kalamata or green works
For the Base
  • 4 whole tortillas whole wheat for a healthier option
For Cooking
  • 1 tablespoon olive oil or any neutral vegetable oil
  • to taste salt
  • to taste pepper

Method
 

Step-by-Step Instructions
  1. Heat olive oil in a non-stick skillet over medium heat for 1-2 minutes.
  2. Add chopped spinach and sauté for 2-3 minutes until wilted.
  3. In a mixing bowl, combine sautéed spinach with feta, mozzarella, sun-dried tomatoes, and olives. Season with salt and pepper, and mix well.
  4. Place a tortilla in the skillet, spoon half the filling onto one half, fold over, and press gently.
  5. Cook for 3-4 minutes on one side until golden, then flip and cook for another 3-4 minutes.
  6. Remove from skillet, let cool for a minute, cut into wedges, and serve warm.
