Ingredients

For the Quesadilla
  • 1 large Flour Tortilla Consider whole grain for added fiber.
  • 1 cup Fresh Spinach Roughly chopped; kale or arugula can be great substitutes.
  • 1/4 cup Feta Cheese Crumble for tangy flavor; goat cheese or ricotta can replace it.
  • 1/4 cup Mozzarella Cheese Shredded; use provolone or Monterey Jack as alternatives.
  • 2 tbsp Sun-Dried Tomatoes Drained and chopped; roasted red peppers or fresh tomatoes work.
  • 1 tbsp Kalamata Olives Finely chopped; omit or substitute with green olives.
  • 1 tbsp Red Onion Thinly sliced; green onions or shallots are sweet alternatives.
  • 1 tsp Olive Oil or Butter For cooking; avocado oil lends a lighter taste.
  • 1/4 cup Cooked Chicken Optional; pre-cooked shredded for added protein.

Equipment

  • skillet

Method

Step-by-Step Instructions for Mediterranean Quesadilla
  1. Begin by laying the large flour tortilla flat on a clean workspace. On one half, layer the shredded mozzarella, chopped fresh spinach, crumbled feta cheese, diced sun-dried tomatoes, Kalamata olives, and red onion. Fold it over to form a half-moon shape.
  2. Heat a skillet on medium. Allow it to warm for about one minute. Add olive oil or butter and let it melt, coating the pan evenly.
  3. Carefully place the folded quesadilla into the hot skillet. Cook for approximately 2-3 minutes on one side until golden brown and cheese begins to melt.
  4. Flip the quesadilla over using a spatula, cooking for another 2-3 minutes until crispy and cheese is fully melted.
  5. Remove the quesadilla from the skillet and let it rest for a minute. Slice into wedges and serve immediately.
