Ingredients
  

For the Meatloaf
  • 500 grams Lean Ground Beef can be swapped with ground turkey
  • 1 cup Ritz Crackers crushed; can use buttery crackers or plain breadcrumbs
  • 120 ml Ketchup or substitute BBQ sauce
  • 120 ml Hickory and Brown Sugar Barbecue Sauce any preferred BBQ sauce can be used
  • 2 Large Eggs consider egg replacers for vegetarian version
For the Mac and Cheese Layer
  • 250 grams Dried Macaroni Noodles gluten-free pasta is a good alternative
  • 500 ml Whole Milk non-dairy milk can be substituted
  • 1 can Condensed Cheddar Cheese Soup or use a homemade cheese sauce
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Ground Black Pepper adjust to taste
  • 1 teaspoon Garlic Powder adjust to taste
  • 1 teaspoon Onion Powder adjust to taste
For the Cheese Topping
  • 225 grams Shredded Mozzarella and Cheddar Cheese Blend substitute with different cheese varieties if desired

Method
 

Preparation Steps
  1. Preheat your oven to 175°C (350°F) and grease a 23×33 cm baking dish.
  2. In a medium bowl, mix 120 ml of ketchup with 120 ml of hickory and brown sugar barbecue sauce.
  3. In a large bowl, combine the ground beef, crushed Ritz crackers, large eggs, and the prepared ketchup-barbecue mixture.
  4. Transfer the mixture to the baking dish and shape it. Spread remaining sauce on top and bake for 30 minutes.
  5. Cook the macaroni in a pot of salted boiling water until tender. Drain and set aside.
  6. In another bowl, whisk together whole milk, cheddar cheese soup, and seasonings, then fold in the cooked macaroni and 225 g of cheese.
  7. Spread the macaroni cheese mixture over the meatloaf and top with remaining cheese.
  8. Bake for an additional 17-20 minutes until cheese is melted and bubbling.
  9. Let the dish rest for about 10 minutes before slicing and serving.
