- In a mixing bowl, combine 1 cup of mascarpone cheese, the juice and zest of two fresh lemons, and about ½ cup of powdered sugar. Beat until creamy and smooth.
- In a shallow dish, mix ½ cup of lemon curd and ¼ cup of limoncello or fresh lemon juice. Dip each ladyfinger quickly for 1-2 seconds on each side.
- Place a layer of dipped ladyfingers in the bottom of your serving dish. Spoon half of the lemon mascarpone mixture over the ladyfingers, then repeat the layering process.
- Cover the assembled Lemon Tiramisu with plastic wrap or a lid and refrigerate for at least 4 hours or overnight.
- Before serving, garnish the top with fresh lemon zest, a sprinkle of powdered sugar, and mint leaves.
