- In a large mixing bowl, combine the ground chicken, mayonnaise, panko breadcrumbs, chopped basil, chives, lemon zest, lemon juice, kosher salt, black pepper, smoked paprika, garlic powder, and grated parmesan cheese. Using your hands or a spatula, mix gently until just combined.
- Divide the chicken mixture into four equal portions and shape each into a patty about ¾ inch thick. Optionally, chill them in the fridge for 15-30 minutes.
- Heat olive oil in a skillet over medium-high heat. Carefully add the patties to the skillet, ensuring they do not touch. Cook for 6-8 minutes on each side until golden brown.
- Once cooked, transfer the patties to a serving plate and let them rest for a couple of minutes before serving.
