  • 2 cloves Garlic Minced
  • 1 tbsp Fresh Ginger Grated
  • 1/4 cup Red Wine or Mirin For sweetness
  • 3 tbsp Brown Sugar Or honey for alternative
  • 2 tbsp Rice Vinegar Balances flavor
Skewers
  • 1 lb Boneless Chicken Cut into chunks
  • 2 tbsp Cornstarch For thickening sauce
  • 8 pieces Wooden Skewers Soaked in water
Serving
  • 2 cups Steamed Rice To serve with skewers
  • 1 cup Pickled Vegetables As a refreshing side
  • 1 cup Miso Soup or Edamame For accompaniment

Method
 

Preparation
  1. Soak wooden skewers in water for 10–20 minutes to prevent burning during grilling.
  2. In a medium bowl, whisk together soy sauce, water, red wine or mirin, brown sugar, and rice vinegar.
  3. Trim excess fat from chicken and cut into 1-2 inch chunks.
  4. Combine minced garlic, grated ginger, and black pepper with the yakitori sauce, marinate chicken for at least 10 minutes.
  5. Pour the remaining yakitori sauce into a saucepan, boil, then simmer until thickened.
  6. Preheat grill to medium-high heat, thread chicken onto skewers, grill for 8-12 minutes while basting.
