- Prepare the Marinade: In a food processor, blend together 1 tablespoon of oil, 3 tablespoons of soy sauce, 3 tablespoons of brown sugar, 2 tablespoons of fresh lemon juice, 2 minced cloves of garlic, 2 teaspoons of grated fresh ginger, 1 chopped red chilli, and 1 stalk of roughly chopped lemongrass until smooth. Season the marinade with salt to taste.
- Marinate the Chicken: In a large mixing bowl, place 1 kg of chicken wings and pour the marinade over them. Stir well to ensure each wing is evenly coated. Cover the bowl and refrigerate for at least 30 minutes.
- Preheat the Air Fryer: Preheat your air fryer to 200°C (390°F). Remove the wings from the refrigerator and let them sit at room temperature for about 10 minutes.
- Cook the Wings: Arrange the marinated chicken wings in a single layer in the air fryer basket. Cook for 15–20 minutes, shaking the basket halfway through for even cooking.
- Toast the Peanuts: In a medium skillet over medium heat, add 1 cup of chopped peanuts and toast for about 5 minutes until golden.
- Serve the Wings: Transfer the chicken wings to a serving plate. Top with toasted peanuts and chopped spring onions. Enjoy!
