  • 1 kg Chicken Wings fresh or frozen; make sure they’re thawed for optimal marination.
For the Marinade
  • 1 tbsp Oil vegetable or canola oil works best.
  • 3 tbsp Soy Sauce swap with tamari to keep it gluten-free.
  • 3 tbsp Brown Sugar honey or coconut sugar can be great substitutes.
  • 2 tbsp Lemon/Lime Juice fresh juice is preferred for the best flavor.
  • 2 cloves Garlic finely minced; fresh is always recommended for full flavor.
  • 2 tsp Fresh Ginger grated; ground ginger can work in a pinch.
  • 1 Red Chilli adjustable to your spice level preference; feel free to omit for a milder option.
  • 1 stalk Lemongrass roughly chopped; provides a delightful citrusy herbal note.
  • Salt to taste; sea or kosher salt is ideal.
For Toppings
  • 1 cup Peanuts chopped; cashews can be fun for a change.
  • ½ cup Spring Onions/Green Onions finely chopped; for a fresh garnish.

Method
 

Step-by-Step Instructions
  1. Prepare the Marinade: In a food processor, blend together 1 tablespoon of oil, 3 tablespoons of soy sauce, 3 tablespoons of brown sugar, 2 tablespoons of fresh lemon juice, 2 minced cloves of garlic, 2 teaspoons of grated fresh ginger, 1 chopped red chilli, and 1 stalk of roughly chopped lemongrass until smooth. Season the marinade with salt to taste.
  2. Marinate the Chicken: In a large mixing bowl, place 1 kg of chicken wings and pour the marinade over them. Stir well to ensure each wing is evenly coated. Cover the bowl and refrigerate for at least 30 minutes.
  3. Preheat the Air Fryer: Preheat your air fryer to 200°C (390°F). Remove the wings from the refrigerator and let them sit at room temperature for about 10 minutes.
  4. Cook the Wings: Arrange the marinated chicken wings in a single layer in the air fryer basket. Cook for 15–20 minutes, shaking the basket halfway through for even cooking.
  5. Toast the Peanuts: In a medium skillet over medium heat, add 1 cup of chopped peanuts and toast for about 5 minutes until golden.
  6. Serve the Wings: Transfer the chicken wings to a serving plate. Top with toasted peanuts and chopped spring onions. Enjoy!
