Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine shredded mozzarella cheese and cream cheese. Microwave for 1 to 1.5 minutes, stirring every 30 seconds until smooth.
  3. Add almond flour, baking powder, and the egg to the melted cheese. Stir until a soft dough forms.
  4. Divide dough into four portions and roll each into a circle about 5 inches in diameter.
  5. Spoon marinara sauce onto one half of the dough, add sausage or pepperoni, some mozzarella, garlic powder, and Italian seasoning.
  6. Fold the dough over the filling to form a half-moon, sealing the edges firmly.
  7. Transfer to the baking sheet, brush olive oil on top, and sprinkle with Parmesan if desired.
  8. Bake in the oven for 18-20 minutes until golden brown.
