Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C) and grease a 2-quart baking dish with olive oil or butter.
  2. Wash two medium zucchinis and grate them, then let the excess moisture drain.
  3. In a skillet, heat 3 tablespoons of olive oil over medium heat, then add chopped onions and sauté for about 8-10 minutes.
  4. Add minced garlic to the skillet and cook for an additional minute, then stir in rinsed rice and sauté for 2 minutes.
  5. In the bowl with grated zucchini, combine the rice mixture and pour in ½ cup of milk, then mix well.
  6. Transfer the mixture into the greased baking dish, cover with aluminum foil, and bake for 50 minutes.
  7. After baking, remove the foil, drizzle with olive oil, sprinkle with reserved Parmesan, and bake for an additional 10-15 minutes.
