Method
 

Step-by-Step Instructions for Volcano Roll
  1. Rinse 1 cup of sushi rice under cold water until the water runs clear. Cook according to package instructions, usually simmering for about 20 minutes. Fold in 2 tablespoons of rice vinegar and cool to room temperature.
  2. Combine 1 cup of shredded imitation crab or cooked shrimp with 2 tablespoons of mayonnaise and 1 tablespoon of sriracha in a mixing bowl. Bake at 400°F for 5-7 minutes until bubbly and golden.
  3. Thinly slice half an avocado and one cucumber into long strips.
  4. Lay a sheet of nori shiny side down on a sushi mat. Spread a layer of sushi rice evenly, leaving a small edge at the top. Flip the nori with rice side down, place avocado and cucumber at the bottom edge.
  5. Start rolling the sushi mat away from you, pressing to keep ingredients tight. Seal the edge with water and slice into 6-8 even pieces.
  6. Spoon the topping over each slice, drizzle with unagi sauce, and sprinkle with sesame seeds and green onion.
  7. Preheat the broiler and broil the topped rolls for 1-2 minutes until golden.
