Ingredients
  

For the Chicken
  • 1 pound Chicken Thighs Can substitute with chicken breasts
  • 1 cup Coconut Milk Almond milk can be used
  • 2 tablespoons Curry Powder Garam masala can be a substitute
  • 3 cloves Minced Garlic Garlic powder can work in a pinch
  • 1 tablespoon Grated Ginger Use less if using ground ginger
For the Coating
  • 1 cup Rice Flour or Cornstarch All-purpose flour can be a substitute
For the Sauce
  • 1/2 cup Thai Chili Sauce Sriracha can be swapped
  • 1/2 cup Plain Yogurt Mayonnaise is an alternative
For Assembly
  • 4 pieces Buns Soft brioche or crusty rolls
  • 1 cup Fresh Herbs (Cilantro, etc.) Can use mint or basil as alternatives
  • 1 cup Pickled Carrots & Cucumber Other pickled veggies can be used

Method
 

Preparation Steps
  1. In a mixing bowl, combine coconut milk, curry powder, minced garlic, grated ginger, salt, and sugar to create a marinade. Add chicken thighs and refrigerate for at least 1 hour.
  2. On a large plate, mix rice flour or cornstarch with salt and pepper. Dredge marinated chicken in the coating mixture.
  3. Heat oil to 350°F (175°C). Fry chicken for 5-7 minutes per side until golden brown and cooked through. Transfer to a wire rack to drain.
  4. In a bowl, mix Thai chili sauce with yogurt to make a spread.
  5. Toast buns in a skillet until warm and crisp.
  6. Spread sauce on buns, add fried chicken, veggies, and herbs. Top with the other bun and gently press.
  7. Garnish with cilantro, lime juice, or crushed peanuts before serving.
