Step‑by‑Step Instructions for Strawberry Palmiers
  1. Preheat your oven to 350°F (180°C) and prepare a baking sheet by lightly greasing it with cooking spray.
  2. In a small saucepan, combine your sliced strawberries, lemon juice, and sugar. Heat over medium-low heat for about 10 minutes.
  3. Mix cold water and cornstarch in a small bowl until dissolved. Pour this mixture into the strawberry filling and cook for an additional 2-3 minutes.
  4. Sprinkle half of your remaining sugar onto a clean surface. Unroll your thawed puff pastry and place it on this sugary surface.
  5. Spread a thin layer of the strawberry mixture evenly over the surface of the rolled out pastry.
  6. Make a small indent down the center of the pastry, roll the pastry towards the center from each side, and wrap the log tightly in plastic wrap.
  7. After freezing, slice the pastry log into ½ inch pieces and lay them flat on the prepared cookie sheet.
