Step-by-Step Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan with butter or cooking spray. Line with parchment paper for easier removal.
- In a mixing bowl, beat the cream cheese with 1/4 cup of sugar until smooth. Incorporate the egg white and mix until blended.
- In a separate bowl, whisk together 1.5 cups of flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and a pinch of salt.
- Beat together 5.5 tablespoons of butter and 1/2 cup of sugar until light and fluffy. Add in one whole egg, yolk, and 1 teaspoon of vanilla, mixing until fully combined.
- Gradually add the dry ingredients to the creamed mixture, alternating with 3/4 cup of sour cream. Mix until just combined.
- Spread half of the batter evenly in the prepared pan, layer with cream cheese filling, raspberries, and then top with remaining batter.
- Combine 1/2 cup of flour, 1/3 cup of sugar, and 2 tablespoons of butter to create streusel, then sprinkle over the batter.
- Bake for 40-45 minutes until golden and a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
