  • 1/2 cup Milk Dairy-free milk can be used
For the Pineapple
  • 1 whole Fresh pineapple Slice into 1/2-inch rings for frying
For Frying
  • 2 cups Vegetable oil Canola or coconut oil can be used
For Dusting
  • 1 tablespoon Additional cinnamon and sugar Adjust to personal taste

Step-by-Step Instructions for Pineapple Fritters
  1. Begin by slicing the fresh pineapple into 1/2-inch thick rings. Set aside.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, salt, and cinnamon. Add egg and milk, stirring until smooth.
  3. Heat vegetable oil in a large pot or deep fryer to 375°F (190°C).
  4. Dip each pineapple ring into the batter, letting excess drip off.
  5. Fry the coated rings in hot oil for about 2 minutes on each side until golden brown.
  6. Remove fritters from oil and drain on paper towels. Dust with cinnamon sugar.
  7. Serve warm with a scoop of coconut ice cream for a tropical touch.
