For the Cake Base
  • 2 cups All-Purpose Flour No substitutes recommended
  • 2 teaspoons Baking Powder
  • 0.5 teaspoon Baking Soda
  • 1 pinch Salt Balances flavors
  • 0.75 cups Unsalted Butter Room temperature
  • 0.5 cup Brown Sugar Light brown sugar can also work
  • 1.25 cups Granulated Sugar Coconut sugar is an alternative
  • 1 cup Mango Puree Homemade preferred
  • 4 large Eggs At room temperature
  • 2 teaspoons Vanilla Extract Almond extract can be used
  • 2 large Ripe Mangoes Sliced for topping
For the Coconut Cream
  • 1 can Coconut Milk Chill beforehand
  • 2-3 teaspoons Sugar or Honey Adjust according to taste

Method
 

Baking Instructions
  1. Preheat your oven to 170°C (340°F).
  2. Grease an 8-inch deep baking tin with unsalted butter and prepare caramel with butter and brown sugar.
  3. Cream together unsalted butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, then mix in the vanilla extract thoroughly.
  5. Incorporate mango puree into the mixture.
  6. Sift together flour, baking powder, baking soda, and salt, then fold into wet ingredients.
  7. Pour cake batter over arranged mango slices in the tin.
  8. Bake for 35-40 minutes until a toothpick comes out clean and the top is golden brown.
  9. Cool for 5 minutes, then invert the cake onto a plate.
  10. Whip the chilled coconut milk with sugar or honey until thick and creamy.
  11. Slice and serve cake with whipped coconut cream on top.
