- Preheat your oven to 400°F (200°C). Prepare a baking tray lined with parchment paper or a silicone mat.
- In a skillet over medium heat, add olive oil. Sauté onion and garlic until the onion becomes translucent, about 3-4 minutes. Transfer to mixing bowl, add sausage meat, sage, thyme, black pepper, and salt, mixing until well incorporated.
- Lightly dust your countertop with flour and roll out the thawed puff pastry sheet to a rectangle about 1/8 inch thick. Cut the pastry into strips, approximately 3 inches wide.
- Take a strip of puff pastry and spoon a line of sausage mixture along one edge, leaving space at the ends for sealing. Fold the pastry over the filling, encasing the sausage tightly and press the edges to seal.
- Slice the assembled rolls into 3-4 inch sections. Place the sections on the baking tray, brushing the tops with a beaten egg.
