Preparation
  1. Preheat your oven to 350°F (175°C) and line a 9x13-inch baking dish with parchment paper.
  2. Whisk together graham cracker crumbs and melted butter in a mixing bowl until resembling wet sand. Press this mixture evenly into the bottom of the prepared baking dish and bake for 10 minutes.
  3. Blend cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, ensuring full incorporation. Pour over the pre-baked crust.
  4. Toss the thinly sliced apples with cinnamon and sugar in a bowl. Layer apples on top of the cheesecake filling.
  5. Bake the bars for 30-35 minutes until edges are set and the center remains slightly jiggly. Let cool at room temperature for 2 hours; then refrigerate for at least 2 more hours.
  6. Drizzle warm caramel sauce over chilled cheesecake bars and slice into squares.
