- Preheat a non-stick skillet over medium heat for about 2-3 minutes.
- Add 1 tablespoon of unsalted butter to the pan and let it melt, swirling to coat the skillet.
- Spread a thin layer of butter on one side of each slice of bread.
- Place one slice of bread buttered-side down in the skillet. Spread a thin layer of pesto on the unbuttered side.
- Tear the burrata into pieces and layer it over the pesto.
- Top with the second slice of bread, buttered-side up, and cook for 3-4 minutes or until golden brown.
- Carefully flip the sandwich, pressing slightly, and cook for another 3-4 minutes until both sides are golden and the cheese melts.
- Transfer to a cutting board, let it rest, then slice in half and serve immediately.
