Step-by-Step Instructions
  1. In a medium bowl, whisk together olive oil, honey, lime juice, lime zest, minced garlic, cumin, salt, and black pepper.
  2. Place chicken breasts in a resealable bag and pour the marinade over them, refrigerate for 30 minutes to 2 hours.
  3. Preheat grill or skillet over medium-high heat and cook chicken for 6-7 minutes on each side until golden brown.
  4. If rice isn't pre-cooked, bring water to a boil, add rice, simmer until fluffy, then let it cool.
