Preparation Steps
- Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
- Cream together the softened butter, granulated sugar, and vanilla bean paste in a mixing bowl until light and fluffy, about 3-4 minutes.
- Sift in the all-purpose flour and pinch of salt. Mix on low speed until just combined to avoid overmixing.
- Press the dough evenly into the bottom of the prepared baking pan and chill in the refrigerator for about 15 minutes.
- Remove the chilled crust and bake for about 15 minutes, or until lightly golden on the edges. Let it cool slightly.
- Combine dried hibiscus and fresh lemon juice in a small bowl and steep for about 15 minutes, then strain the mixture.
- In a separate bowl, whisk together the eggs and granulated sugar. Gradually add the hibiscus-infused lemon juice and flour, whisking until smooth.
- Pour the filling over the cooled crust and bake for 20-25 minutes until set but slightly jiggly in the center.
- Allow the bars to cool completely, then lift out using the parchment and cut into squares. Dust with confectioner’s sugar before serving.
