Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
  2. Cream together the softened butter, granulated sugar, and vanilla bean paste in a mixing bowl until light and fluffy, about 3-4 minutes.
  3. Sift in the all-purpose flour and pinch of salt. Mix on low speed until just combined to avoid overmixing.
  4. Press the dough evenly into the bottom of the prepared baking pan and chill in the refrigerator for about 15 minutes.
  5. Remove the chilled crust and bake for about 15 minutes, or until lightly golden on the edges. Let it cool slightly.
  6. Combine dried hibiscus and fresh lemon juice in a small bowl and steep for about 15 minutes, then strain the mixture.
  7. In a separate bowl, whisk together the eggs and granulated sugar. Gradually add the hibiscus-infused lemon juice and flour, whisking until smooth.
  8. Pour the filling over the cooled crust and bake for 20-25 minutes until set but slightly jiggly in the center.
  9. Allow the bars to cool completely, then lift out using the parchment and cut into squares. Dust with confectioner’s sugar before serving.
