- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine softened unsalted butter, brown sugar, and granulated sugar. Beat until light and fluffy.
- Beat in the pumpkin puree, large egg, and vanilla extract until combined.
- In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt. Gradually add to the wet mixture.
- Fold in chocolate chips, mini marshmallows, and crushed graham crackers.
