Step-by-Step Instructions
  1. Soak the dried shiitake mushrooms in boiling water for at least 30 minutes.
  2. Heat oil in a large pot over medium heat, then add onion, garlic, and ginger. Stir for about 5 minutes.
  3. Pour in the reserved mushroom soaking liquid along with broth, soy sauce, cinnamon stick, star anise, and a pinch of pepper. Bring to a boil, then simmer for 10 minutes.
  4. Add chicken thighs and cook for about 20 minutes, ensuring they reach an internal temperature of 165°F.
  5. Stir in chopped fennel, scallion whites, and reserved shiitake mushrooms. Cook for an additional 5 minutes.
  6. Incorporate bok choy stems and let simmer for 3 minutes.
  7. Add bok choy greens and bean sprouts, cooking just until greens wilt, about 2 minutes.
  8. Remove cinnamon stick and star anise. Ladle soup into bowls and garnish with scallion greens, cilantro, and sesame oil. Serve immediately.
