  1. Begin by cutting boneless chicken thighs into bite-sized pieces. In a mixing bowl, combine the chicken with soy sauce, minced garlic, and grated ginger. Stir well to coat the chicken evenly. Allow the chicken to marinate for at least 30 minutes.
  2. While the chicken marinates, wash and slice the zucchini into even medallions or half-moons for uniform cooking.
