- Begin by cutting boneless chicken thighs into bite-sized pieces. In a mixing bowl, combine the chicken with soy sauce, minced garlic, and grated ginger. Stir well to coat the chicken evenly. Allow the chicken to marinate for at least 30 minutes.
- While the chicken marinates, wash and slice the zucchini into even medallions or half-moons for uniform cooking.
