Cooking Steps
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of lean ground turkey, seasoned with salt, pepper, paprika, and dried thyme. Cook for 5-7 minutes until browned.
- Add 1 diced onion and 1 diced bell pepper to the skillet. Sauté for about 5 minutes until tender and fragrant.
- Toss in 2 cups of fresh spinach or kale and stir gently until wilted, about 2-3 minutes.
- In a large bowl, combine the turkey and vegetable mixture with 3 cups of cubed sweet potatoes.
- Transfer the mixture into a greased baking dish, top with shredded cheddar and mozzarella cheese, and bake for 25-30 minutes until bubbly and golden.
