  • 1 cup Shredded Mozzarella Cheese Low-fat option can be used
  • 1 tbsp Olive Oil Or use avocado oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Paprika For more heat, substitute with cayenne
  • 1 tsp Dried Thyme Fresh thyme enhances flavor

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of lean ground turkey, seasoned with salt, pepper, paprika, and dried thyme. Cook for 5-7 minutes until browned.
  3. Add 1 diced onion and 1 diced bell pepper to the skillet. Sauté for about 5 minutes until tender and fragrant.
  4. Toss in 2 cups of fresh spinach or kale and stir gently until wilted, about 2-3 minutes.
  5. In a large bowl, combine the turkey and vegetable mixture with 3 cups of cubed sweet potatoes.
  6. Transfer the mixture into a greased baking dish, top with shredded cheddar and mozzarella cheese, and bake for 25-30 minutes until bubbly and golden.
