For the Creamy Sauce
  • 0.5 cup Mayonnaise Or Greek yogurt

Preparation Steps
  1. Marinate the shrimp by whisking together olive oil, spices, lime juice, salt, and pepper. Add shrimp and let sit for 15-20 minutes.
  2. Prepare the corn salsa by mixing corn, red bell pepper, green onions, cilantro, lime juice, and salt. Chill for 10 minutes.
  3. Mash the avocados in a bowl, season with lime juice, salt, and pepper to taste.
  4. For the creamy sauce, combine mayonnaise (or Greek yogurt) with lime juice, garlic powder, and salt. Whisk until smooth.
  5. Preheat the grill to medium-high heat. Grill the marinated shrimp for 2-3 minutes per side until pink and charred.
  6. Assemble the bowls starting with rice or quinoa, layered with corn salsa, avocado mash, and grilled shrimp. Drizzle with creamy sauce.
