For the Wrap
  • 1 medium Zucchini or summer squash
  • 1 medium Red Bell Pepper or yellow/orange bell peppers
  • 1 medium Yellow Bell Pepper or green bell peppers
  • 1 medium Red Onion or sweet onions/shallots
  • 1 cup Cherry Tomatoes or grape tomatoes
  • 2 tablespoons Olive Oil or avocado oil
  • to taste Salt
  • to taste Pepper
  • 4 large Whole Wheat Wraps or Tortillas or gluten-free tortillas
  • 1 cup Hummus store-bought or homemade
  • 2 cups Fresh Spinach or Arugula or lettuce
For the Zesty Herb Sauce
  • 1 cup Greek Yogurt or dairy-free yogurt
  • 2 tablespoons Lemon Juice or lime juice
  • 1 tablespoon Lemon Zest
  • 2 tablespoons Fresh Dill or dried herbs
  • 2 tablespoons Fresh Parsley or different herbs
  • 2 cloves Minced Garlic adjust based on heat preference

Method
 

Step-by-Step Instructions
  1. Preheat the grill to medium-high heat (about 400°F).
  2. In a mixing bowl, combine sliced zucchini, red and yellow bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil, and season with salt and pepper. Toss until coated.
  3. Place seasoned vegetables on the grill for 5-7 minutes until tender and charred. Remove and let cool slightly.
  4. In a bowl, mix Greek yogurt, lemon juice, lemon zest, dill, parsley, and minced garlic until creamy.
  5. Place a whole wheat wrap flat, spread about 1/4 cup of hummus in the center.
  6. Layer grilled vegetables and fresh spinach or arugula on top of the hummus.
  7. Drizzle Zesty Herb Sauce over the filling.
  8. Roll the wrap tightly, slice in half, and serve immediately.
  9. Repeat the assembly for any additional wraps.
