- Preheat the grill to medium-high heat (about 400°F).
- In a mixing bowl, combine sliced zucchini, red and yellow bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil, and season with salt and pepper. Toss until coated.
- Place seasoned vegetables on the grill for 5-7 minutes until tender and charred. Remove and let cool slightly.
- In a bowl, mix Greek yogurt, lemon juice, lemon zest, dill, parsley, and minced garlic until creamy.
- Place a whole wheat wrap flat, spread about 1/4 cup of hummus in the center.
- Layer grilled vegetables and fresh spinach or arugula on top of the hummus.
- Drizzle Zesty Herb Sauce over the filling.
- Roll the wrap tightly, slice in half, and serve immediately.
- Repeat the assembly for any additional wraps.
