Step-by-Step Instructions
- Preheat your grill or grill pan over medium-high heat for about 5 minutes.
- In a large mixing bowl, toss together the zucchini, red and yellow bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil, then season with salt and pepper.
- Carefully place the seasoned vegetables on the grill and grill for about 5–7 minutes, turning occasionally, until tender and lightly charred.
- In a medium bowl, combine the Greek yogurt, fresh lemon juice, lemon zest, dill, parsley, minced garlic, salt, and pepper. Mix until well-combined.
- Lay one whole wheat wrap flat and spread about 1/4 cup of hummus in the center.
- Layer a generous portion of the grilled vegetables followed by fresh spinach or arugula on top of the hummus.
- Drizzle the Zesty Herb Sauce over the layered vegetables.
- Fold in the sides of the wrap and roll tightly from the bottom up. Slice in half diagonally to reveal the layers.
- Serve the completed Grilled Mediterranean Veggie Wrap immediately.
