Step-by-Step Instructions
  1. Preheat your grill or grill pan over medium-high heat for about 5 minutes.
  2. In a large mixing bowl, toss together the zucchini, red and yellow bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil, then season with salt and pepper.
  3. Carefully place the seasoned vegetables on the grill and grill for about 5–7 minutes, turning occasionally, until tender and lightly charred.
  4. In a medium bowl, combine the Greek yogurt, fresh lemon juice, lemon zest, dill, parsley, minced garlic, salt, and pepper. Mix until well-combined.
  5. Lay one whole wheat wrap flat and spread about 1/4 cup of hummus in the center.
  6. Layer a generous portion of the grilled vegetables followed by fresh spinach or arugula on top of the hummus.
  7. Drizzle the Zesty Herb Sauce over the layered vegetables.
  8. Fold in the sides of the wrap and roll tightly from the bottom up. Slice in half diagonally to reveal the layers.
