Preparation Steps
- Preheat your grill to medium heat, around 375°F (190°C). Clean the grates and lightly oil them.
- In a large bowl, combine sliced zucchini, diced red bell pepper, and thinly sliced red onion. Drizzle with olive oil and season with salt, pepper, oregano, and basil.
- Spread the seasoned vegetables on the preheated grill and cook for 5-7 minutes, turning occasionally until tender and charred.
- In a skillet, warm more olive oil and sauté minced garlic for 30 seconds. Add fresh spinach and cook until wilted, about 2 minutes.
- Lay out tortillas and layer with grilled veggies, sautéed spinach, cherry tomatoes, feta, and mozzarella on one half. Fold tortillas over.
- Grill the filled tortillas for 3-4 minutes on each side until golden brown and cheese has melted.
- Remove from grill and let rest for 5 minutes before cutting into wedges.
