Ingredients
  

For the Quesadillas
  • 4 pieces Whole Wheat Tortillas Substitute with gluten-free tortillas if needed.
  • 1 medium Zucchini Can be replaced with summer squash or eggplant.
  • 1 medium Red Bell Pepper Swap for yellow or orange bell peppers.
  • 1 medium Red Onion Use yellow onions for a similar taste.
  • 2 cups Fresh Spinach Substitute with kale or arugula.
  • 1 cup Cherry Tomatoes Grape tomatoes can also work.
For the Cheese
  • 1 cup Feta Cheese Consider goat cheese for a different kick.
  • 1 cup Shredded Mozzarella Cheese Use Monterey Jack or vegan cheese for a twist.
For Flavoring
  • 2 tablespoons Olive Oil Can be replaced with avocado oil.
  • 1 teaspoon Dried Oregano Fresh oregano can be used, just adjust the quantity.
  • 1 teaspoon Dried Basil Use fresh basil for an even more vibrant flavor.
  • to taste Salt and Pepper Adjust according to personal preference.
  • 2 cloves Garlic Can use garlic powder as an alternative.

Method
 

Preparation Steps
  1. Preheat your grill to medium heat, around 375°F (190°C). Clean the grates and lightly oil them.
  2. In a large bowl, combine sliced zucchini, diced red bell pepper, and thinly sliced red onion. Drizzle with olive oil and season with salt, pepper, oregano, and basil.
  3. Spread the seasoned vegetables on the preheated grill and cook for 5-7 minutes, turning occasionally until tender and charred.
  4. In a skillet, warm more olive oil and sauté minced garlic for 30 seconds. Add fresh spinach and cook until wilted, about 2 minutes.
  5. Lay out tortillas and layer with grilled veggies, sautéed spinach, cherry tomatoes, feta, and mozzarella on one half. Fold tortillas over.
  6. Grill the filled tortillas for 3-4 minutes on each side until golden brown and cheese has melted.
  7. Remove from grill and let rest for 5 minutes before cutting into wedges.
