- Whisk together olive oil, lemon juice, minced garlic, honey, smoked paprika, and cayenne pepper. Season with salt and pepper to taste.
- Add the jumbo shrimp to the marinade, toss to coat, cover, and refrigerate for at least 30 minutes.
- Preheat your grill to medium-high heat (around 400°F/200°C). Grease the grates to prevent sticking.
- If using wooden skewers, soak them in water for 30 minutes. Thread the shrimp onto skewers.
- Grill the shrimp for 2-3 minutes on each side until pink and opaque.
- Serve immediately, optionally drizzling with more lemon juice.
