- In a medium-sized bowl, combine the Plain Greek Yogurt, creamy Peanut Butter, honey, and vanilla extract. Stir until smooth and creamy, about 2-3 minutes. Gently fold in the Mini Chocolate Chips.
- Line a baking sheet with parchment paper. Scoop out the yogurt mixture and place dollops on the parchment. Flatten them slightly. Freeze for 1-2 hours until firm.
- Melt the Dark Chocolate Chips and coconut oil in a heat-safe bowl in the microwave or using a double boiler until smooth.
- Dip each frozen bite into the melted chocolate, allowing excess chocolate to drip off before placing them back on the parchment.
- Return the baking sheet to the freezer for an additional 15-20 minutes until the chocolate coating is set. Store in an airtight container in the freezer.
