  • 1.5 pounds Chicken Thighs or chicken breast for a leaner option
  • 1/4 cup Olive Oil
  • 3 cloves Garlic minced
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 tablespoon Red Wine Vinegar
  • 2 teaspoons Dried Oregano or fresh oregano
  • 1 teaspoon Ground Cumin
  • to taste Salt & Black Pepper essential for seasoning
For the Bowl Assembly
  • 1 cup Cooked Rice or Cauliflower Rice opt for cauliflower rice for low-carb choice
  • 1/2 cup Cherry Tomatoes halved or diced
  • 1 Cucumber diced
  • 1 Red Onion thinly sliced or pickled
  • to taste Kalamata Olives optional
  • to taste Feta Cheese optional garnish
  • to taste Fresh Parsley for garnish

Method
 

Preparation Steps
  1. In a medium bowl, whisk together olive oil, minced garlic, lemon juice, red wine vinegar, dried oregano, ground cumin, salt, and pepper to create the marinade.
  2. Place chicken thighs in a shallow dish or resealable bag, pour the marinade over, coat thoroughly, and refrigerate for at least 30 minutes.
  3. Heat grill or skillet over medium-high heat for about 5 minutes. Add marinated chicken and cook for 5-7 minutes on each side until golden brown and cooked through.
  4. Remove chicken from heat, let it rest for 5 minutes, then slice it into bite-sized pieces.
  5. In serving bowls, layer cooked rice or cauliflower rice, sliced chicken, cherry tomatoes, cucumber, red onion, and olives. Top with tzatziki sauce and parsley.
