Step-by-Step Instructions
  1. Preheat your oven to 300°F (150°C) and season the beef short ribs with salt and pepper.
  2. In a Dutch oven, heat sesame oil over medium-high heat and sear the short ribs for 4-5 minutes on each side.
  3. Whisk together miso paste, soy sauce, rice vinegar, brown sugar, ginger, and garlic until smooth.
  4. Pour a splash of beef broth into the pot to deglaze and scrape up the browned bits.
  5. Return the ribs to the pot and pour the miso sauce and remaining beef broth over them.
  6. Simmer the mixture over medium heat, cover, and braise in the oven for about 3 hours.
  7. If desired, thicken the sauce by boiling it gently and adding a cornstarch slurry.
  8. Serve the ribs garnished with green onions and sesame seeds, and enjoy!
