- Preheat your oven to 300°F (150°C) and season the beef short ribs with salt and pepper.
- In a Dutch oven, heat sesame oil over medium-high heat and sear the short ribs for 4-5 minutes on each side.
- Whisk together miso paste, soy sauce, rice vinegar, brown sugar, ginger, and garlic until smooth.
- Pour a splash of beef broth into the pot to deglaze and scrape up the browned bits.
- Return the ribs to the pot and pour the miso sauce and remaining beef broth over them.
- Simmer the mixture over medium heat, cover, and braise in the oven for about 3 hours.
- If desired, thicken the sauce by boiling it gently and adding a cornstarch slurry.
- Serve the ribs garnished with green onions and sesame seeds, and enjoy!
