Ingredients
  

For the Meatloaf
  • 1 pound Ground Chicken or ground turkey
  • 1 cup Panko Bread Crumbs regular breadcrumbs can be used
  • 1/2 cup Grated Parmesan Cheese freshly grated for best taste
  • 1/2 cup Milk any non-dairy milk works
  • 2 Eggs well-beaten
  • 4 cloves Garlic (minced) use fresh garlic
  • 1 tablespoon Olive Oil for sautéing
  • 1 tablespoon Dried Italian Seasoning adjust to taste
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Black Pepper adjust to taste
  • 1/4 cup Chopped Fresh Parsley other herbs work too
  • 1 cup Chicken Broth or vegetable broth
For the Topping
  • 2 tablespoons Butter (melted) olive oil can be used
  • 1 teaspoon Garlic Powder

  1. Combine Wet Ingredients: Whisk together 1/2 cup of milk and 2 beaten eggs until smooth.
  2. Add Dry Ingredients: Incorporate 1 cup of panko breadcrumbs, 1/2 cup of grated Parmesan cheese, 1 tablespoon of dried Italian seasoning, 1 teaspoon of salt, and 1/2 teaspoon of black pepper into the wet mixture.
  3. Sauté Garlic: Heat 1 tablespoon of olive oil in a skillet and sauté 4 cloves of minced garlic until fragrant, about 1-2 minutes.
  4. Incorporate Garlic and Parsley: Add the sautéed garlic and 1/4 cup of chopped fresh parsley to the breadcrumb mixture.
  5. Add Ground Chicken: Fold in 1 pound of ground chicken into the breadcrumb mixture, being careful not to overmix.
  6. Preheat Oven: Preheat your oven to 350°F (175°C).
  7. Prepare Baking Dish: Grease a loaf pan with cooking spray or olive oil.
  8. Shape Meatloaf: Transfer the mixture into the greased loaf pan and shape it into an even loaf.
  9. Make Garlic Butter Topping: Combine 2 tablespoons of melted butter with 1 teaspoon of garlic powder.
