  • 2 pounds Beef stew meat Cuts like chuck roast recommended

Garlic Butter Sauce

Seasoning

  • 1 teaspoon Dried rosemary Fresh or omit if prefer
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Black pepper Freshly ground preferred
Cooking Liquid
  • 1 cup Beef broth Chicken or vegetable broth can substitute
  • 2 tablespoons Olive oil For searing the beef

Method
 

Steps
  1. Cut the beef stew meat into bite-sized pieces, about 1-inch cubes. Halve the baby potatoes for even cooking.
  2. Optionally, parboil the potatoes for about 5 minutes. Drain and set aside.
  3. Heat olive oil in a skillet over medium-high heat and sear the beef pieces for 3-4 minutes on each side.
  4. Melt unsalted butter and mix in garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper to create the garlic butter sauce.
  5. In the slow cooker, add the halved potatoes, seared beef, and pour the garlic butter sauce over. Add beef broth.
  6. Cover and slow cook on low for 6-8 hours or on high for 3-4 hours until beef is fork-tender.
  7. Let the dish rest for about 10 minutes before serving.
