- Cut the beef stew meat into bite-sized pieces, about 1-inch cubes. Halve the baby potatoes for even cooking.
- Optionally, parboil the potatoes for about 5 minutes. Drain and set aside.
- Heat olive oil in a skillet over medium-high heat and sear the beef pieces for 3-4 minutes on each side.
- Melt unsalted butter and mix in garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper to create the garlic butter sauce.
- In the slow cooker, add the halved potatoes, seared beef, and pour the garlic butter sauce over. Add beef broth.
- Cover and slow cook on low for 6-8 hours or on high for 3-4 hours until beef is fork-tender.
- Let the dish rest for about 10 minutes before serving.
