Ingredients
  

For the Bowl
  • 8 oz Large Shrimp peeled and deveined
  • 1 medium Avocado ripe yet firm
  • 1 cup Jasmine or Brown Rice as base
For the Salsa
  • 1 medium Mango diced
  • 1 medium Ripe Tomato diced
  • 1/4 cup Red Onion diced
  • 1/4 cup Cilantro chopped
  • 1 small Jalapeño diced, to taste
For the Sauce
  • 2 tbsp Fresh Lime Juice preferably fresh
  • 1/2 cup Sour Cream or Greek Yogurt or coconut yogurt
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tbsp Olive Oil for marinating shrimp
For Seasoning
  • 1 tsp Salt
  • 1 tsp Pepper

Method
 

Steps
  1. Marinate Shrimp: Toss the shrimp with olive oil, garlic powder, chili powder, salt, and pepper. Marinate for 15-20 minutes.
  2. Grill Shrimp: Preheat grill and cook shrimp for about 2 minutes per side until pink and opaque.
  3. Prepare Salsa: Combine diced mango, tomato, onion, jalapeño, cilantro, and lime juice. Season with salt.
  4. Make Lime-Chili Sauce: Blend sour cream, lime juice, chili powder, garlic powder, and salt until smooth.
  5. Cook Rice: Prepare rice according to package instructions and fluff when done.
  6. Assemble Bowls: Layer rice, shrimp, avocado, and salsa in a bowl. Drizzle with lime-chili sauce. Serve immediately.
