  • 1 cup quinoa rinsed and drained
  • 2 cups water
  • 1-2 cups bell peppers diced
  • 1 cup corn fresh or frozen
  • 1 small red onion diced and added before serving
  • 1/2 cup olives sliced; Kalamata or green
  • 1/4 cup fresh cilantro chopped, with stems
  • 1/2 cup feta cheese crumbled or block
For the Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano crushed
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon black pepper adjust to taste
Optional Garnish
  • 1/4 cup fresh parsley chopped

Method
 

Step-by-Step Instructions
  1. Rinse quinoa under cold water in a fine-mesh strainer for 30 seconds. Shake off excess water.
  2. In a medium saucepan, boil 2 cups of water. Stir in rinsed quinoa and a pinch of salt, cover, and simmer for 15 minutes until fluffy.
  3. Remove from heat and let sit covered for 5 minutes, then fluff with a fork and spread on a baking sheet to cool.
  4. Dice bell peppers, slice olives, and chop cilantro and parsley while quinoa cools. Keep red onion separate until mixing.
  5. In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and black pepper.
  6. In a large bowl, combine cooled quinoa, vegetables, and feta. Pour dressing over and gently toss.
  7. Taste and adjust seasoning as necessary before serving.
  8. Let salad sit for 15-30 minutes before serving to enhance flavors.
