Ingredients
  

For the Peanut Sauce
  • 1/2 cup creamy peanut butter ensure it's smooth for better mixing
  • 1/4 cup soy sauce use gluten-free soy sauce if needed
  • 2 tablespoons honey maple syrup can be used for a vegan alternative
  • 1 tablespoon rice vinegar can be replaced with apple cider vinegar
  • 1 tablespoon sesame oil olive oil may be used
  • 1 teaspoon minced garlic fresh garlic enhances flavor
  • 1 teaspoon grated ginger ground ginger can be used as substitute
For the Wrap
  • 2 cups cooked chicken can be substituted with tofu or chickpeas
  • 4 large lettuce leaves romaine and butter lettuce are ideal
  • 1 cup shredded carrots use grated zucchini for a different texture
  • 1 cup sliced bell peppers substitute with cucumbers or radishes if desired
  • 1/2 cup chopped fresh cilantro omit if you dislike cilantro
  • optional chopped peanuts almonds or sunflower seeds can replace peanuts

Method
 

Instructions
  1. In a medium bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until smooth.
  2. In a large mixing bowl, combine shredded cooked chicken with half of the peanut sauce and stir until evenly coated.
  3. Lay out the large lettuce leaves and spoon an even amount of the chicken mixture into each leaf.
  4. Add shredded carrots, sliced bell peppers, and chopped cilantro on top of the chicken in each lettuce leaf.
  5. Fold in the sides of the lettuce leaves over the filling and roll them tightly to create a wrap.
