- In a medium bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until smooth.
- In a large mixing bowl, combine shredded cooked chicken with half of the peanut sauce and stir until evenly coated.
- Lay out the large lettuce leaves and spoon an even amount of the chicken mixture into each leaf.
- Add shredded carrots, sliced bell peppers, and chopped cilantro on top of the chicken in each lettuce leaf.
- Fold in the sides of the lettuce leaves over the filling and roll them tightly to create a wrap.
