  • ½ teaspoon dried thyme

  • ½ teaspoon salt cooking or kosher; use half if using fine table salt

  • ¾ cup milk full-fat or low-fat; non-dairy milk works as an alternative
  • ½ cup plain yogurt Greek or regular, full-fat, and unsweetened; sour cream is a good substitute
  • 2 large eggs approx. 50-55 grams each; use flax eggs for a vegan alternative
  • 50 grams unsalted butter melted; oil or margarine can also substitute

Step-by-Step Instructions for Cheese, Herb & Garlic Quick Bread
  1. Preheat your oven to 180°C (350°F) and grease or line a loaf pan with parchment paper.
  2. In a mixing bowl, combine the finely chopped fresh rosemary, parsley, crushed garlic, olive oil, and salt. Stir until thick.
  3. In another bowl, whisk together the plain flour, baking soda, and half a teaspoon of salt until smooth.
  4. In a third bowl, mix yogurt, milk, eggs, melted butter, and remaining garlic until smooth.
  5. Create a well in the dry ingredients and pour in the wet mixture. Stir gently until just combined.
  6. Layer one-third of the batter into the loaf pan, dollop with herb mixture, and add cheese. Repeat twice.
  7. Bake in the preheated oven for 30 minutes until golden. Cover with foil for an additional 20 minutes.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool for at least 10 minutes before slicing.
