For the Peanut Sauce

  • 1 tbsp Fresh Ginger (Grated) Use ginger powder if fresh isn't available.
  • 2 cloves Garlic Fresh garlic is best for a punch of taste.
  • 2 tbsp Honey Maple syrup or agave nectar are great alternatives.
  • 2 tbsp Lime Juice Fresh lime juice is best to capture the zestiness.
For Garnish
  • 1/4 cup Fresh Cilantro Omit if not a fan, or use parsley instead.

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together creamy peanut butter, soy sauce, sesame oil, lime juice, minced garlic, grated ginger, and honey until you achieve a smooth consistency. Set aside.
  2. Slice boneless chicken breast into strips and marinate it with soy sauce and sesame oil for about 10 minutes.
  3. Rinse and dry fresh lettuce leaves. Shred purple cabbage and julienne carrots.
  4. Heat a skillet over medium-high heat and cook marinated chicken strips for 6-8 minutes until cooked through.
  5. Warm flour tortillas in a skillet for about 30 seconds on each side or microwave them for 10-15 seconds.
  6. Spread peanut sauce on each tortilla. Layer with lettuce, cabbage, carrots, and cooked chicken. Sprinkle cilantro on top and roll tightly.
  7. Slice each wrap in half and serve with extra peanut sauce on the side.
