  • 2 cloves Garlic 1/2 teaspoon of garlic powder can substitute.
  • 2 tbsp Olive Oil
  • 1 tsp Lemon Zest Can be omitted.
  • to taste Salt
  • to taste Black Pepper
  • 1 tsp Red Pepper Flakes Optional.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper or grease it.
  3. In a mixing bowl, combine chopped spinach, crumbled feta cheese, softened cream cheese, minced garlic, olive oil, lemon zest, salt, black pepper, and red pepper flakes.
  4. Lay the fresh salmon flat on a clean surface; ensure it is butterflied.
  5. Spread the filling evenly over the salmon.
  6. Carefully roll the salmon from one long edge to the opposite edge.
  7. Slice the rolled salmon into 1-inch thick pinwheels and place cut-side up on the baking sheet.
  8. Bake for 18-22 minutes until salmon flakes easily and edges are golden.
  9. Allow the pinwheels to cool for a few minutes before serving.
