  • 1 pound chicken breast tender
  • 1 cup cashews or unsalted almonds/peanuts
For the Veggies
  • 2 cups bell peppers any color
  • 1 medium red onion
For the Marinade
  • 1/4 cup soy sauce or tamari for gluten-free
  • 2 tablespoons honey or agave/maple syrup for vegan
  • 2 cloves garlic minced
  • 1 tablespoon ginger freshly grated
  • 2 tablespoons rice vinegar optional
  • 2 tablespoons sesame oil or another oil
For Seasoning
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and freshly grated ginger.
  3. Add bite-sized pieces of chicken to the marinade and let it marinate for at least 15 minutes.
  4. Arrange the marinated chicken, chopped bell peppers, and diced red onion in an even layer on a large sheet pan.
  5. Drizzle any remaining marinade over the arranged ingredients and season with salt and pepper.
  6. Bake for 20 minutes, stirring halfway through to ensure even cooking.
  7. Sprinkle the cashews over the top and return the pan to the oven for an additional 10-15 minutes until cooked through.
  8. Garnish with freshly chopped cilantro and serve over rice or noodles.
