  • 4 cups Cauliflower Rice fresh or frozen varieties work well
  • 4 cups Romaine Lettuce forms the base layer
For the Toppings
  • 1 each Avocado diced
  • 1 cup Cherry Tomatoes halved
  • 1/2 medium Red Onion finely diced
  • 1 cup Mexican Cheese Blend shredded
  • 1/4 cup Fresh Cilantro chopped
  • 1/2 cup Sugar-Free Salsa for drizzling
  • 1/2 cup Sour Cream for topping
  • 2 tablespoons Lime Juice freshly squeezed
  • 1 each Jalapeño finely minced

Method
 

Step-by-Step Instructions
  1. Brown the Ground Chicken in a large skillet over medium-high heat for 5-6 minutes, stirring frequently.
  2. Once browned, drain excess fat, sprinkle taco seasoning and add 2-3 tablespoons of water. Stir for about 2 minutes until well coated.
  3. Remove from heat and let the chicken rest for about 5 minutes.
  4. Prepare the cauliflower rice: microwave frozen rice or sauté fresh in a pan for about 5-7 minutes.
  5. Assemble the bowls by layering romaine lettuce, followed by cauliflower rice and seasoned chicken.
  6. Add diced avocado, halved cherry tomatoes, and diced red onion on top.
  7. Sprinkle shredded cheese, add cilantro, a dollop of sour cream, drizzle salsa, and minced jalapeño.
  8. Squeeze fresh lime juice over each bowl before serving.
