Steps
- Begin by dicing fresh peaches and placing them into a bowl. Drizzle with lemon juice to enhance flavor and prevent browning. Mix gently, then set aside.
- In a large mixing bowl, combine flour, sugar, baking powder, cinnamon, ginger, nutmeg, and salt. Whisk until well blended.
- In a separate bowl, whisk the eggs until frothy. Add melted butter, milk, and almond extract. Mix until smooth.
- Slowly pour the dry ingredients into the wet mixture, stirring gently until just combined. Fold in diced peaches.
- In a deep saucepan, pour enough vegetable oil for frying. Heat oil to 375°F (190°C) using a thermometer.
- Scoop spoonfuls of the batter into the hot oil, frying 2-3 fritters at a time for about 2-4 minutes per side.
- Remove fritters with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
- In a bowl, whisk together confectioner's sugar, almond extract, and milk until smooth for the glaze.
- Drizzle the almond glaze over each fritter, allowing it to set before serving.
