Step-by-Step Instructions
  1. In a large pot, melt the butter or heat olive oil over medium heat. Add the chopped onion and diced poblano pepper, cooking for about 5-6 minutes until tender and fragrant. Stir in half of the seasoning blend.
  2. Add the shredded chicken, black beans, and frozen corn to the pot. Pour in the chicken broth and stir in the remaining seasoning blend. Bring to a gentle simmer and cook uncovered for 15 minutes.
  3. Reduce the heat slightly and stir in the heavy cream and shredded cheese until melted. Let it simmer gently for a couple of minutes.
  4. Let the soup simmer for an additional 15 minutes. Add fresh lime juice before serving, adjusting seasoning if necessary.
  5. Ladle into bowls and garnish with cilantro. Serve warm with crusty bread.
