Preparation Steps
- Make the Dough: In a large mixing bowl, sift together flour, icing sugar, salt, and tea leaves. Rub in butter until resembling breadcrumbs. Combine egg and ice water, mixing until dough forms.
- Chill: Shape the dough into a disc, wrap in cling film, and refrigerate for at least 1 hour.
- Prepare Tart Shell: Roll out dough and lay it into tart tin. Prick base with a fork and refrigerate overnight.
- Blind Bake: Preheat oven to 180°C (350°F). Blind bake with weights for 15 minutes, then apply egg wash and bake for an additional 10 minutes.
- Steep Tea: Heat double cream until warm. Add tea bags and steep for 20 minutes.
- Make Custard: Whisk egg yolks and sugar. Gradually add warm cream while whisking. Strain the mixture for a smooth custard.
- Bake: Pour custard into tart shell and bake at 150°C (300°F) for about 40 minutes until set with a jiggle.
- Cool and Chill: Allow tart to cool, then chill for 2-4 hours.
- Caramelize Sugar: Sprinkle caster sugar on chilled custard and use a blowtorch to caramelize until golden brown.
