Dough Preparation
  1. In a medium mixing bowl, whisk together 2 cups of cake flour, 1 tablespoon of cornstarch, 1 teaspoon of baking powder, and ½ teaspoon of salt.
  2. In a stand mixer fitted with the paddle attachment, beat ½ cup of unsalted butter and ½ cup of vegetable shortening until light and fluffy, about 2-3 minutes.
  3. Gradually add 1 cup of granulated sugar and 1 tablespoon of orange zest, mixing until well combined.
  4. Add 1 egg, 1 egg white, 1 teaspoon of orange extract, and 1 teaspoon of vanilla extract, mixing until incorporated.
Combine Dry Ingredients
  1. Slowly incorporate the flour mixture into the wet ingredients, mixing on low speed until just combined.
  2. Cover the dough with plastic wrap and refrigerate for 2-3 hours to prevent cookies from spreading during baking.
Preheat Oven
  1. Preheat your oven to 375°F (190°C) about 10 minutes before baking.
  2. Line two baking sheets with parchment paper or silicone baking mats.
Shaping Cookies
  1. Remove the dough from the refrigerator and roll into golf ball-sized portions.
  2. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  3. Flatten each ball slightly with the palm of your hand.
Baking
  1. Bake the cookies in the preheated oven for 8-11 minutes, or until the edges are lightly golden and the centers remain soft.
  2. Cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Prepare Frosting
  1. Whip 4 ounces of cream cheese and ¼ cup of salted butter in a medium bowl until smooth and fluffy, about 2-3 minutes.
  2. Gradually add 2 cups of powdered sugar and 1 teaspoon of orange extract, mixing until creamy.
Frosting Cookies
  1. Once cooled, frost each cookie with the creamy orange frosting and sprinkle with colorful sprinkles if desired.
