Preparation Steps

  2. Slice the zucchini into thin rounds, sprinkle salt, and let sit for 10 minutes to draw out moisture.
  3. Combine black beans, spices, and a generous amount of enchilada sauce in a mixing bowl.
  4. Take a corn tortilla, layer with zucchini slices and black bean mix, and roll it seam-side down in a baking dish.
  5. Pour remaining enchilada sauce over the top and sprinkle with vegan cheese, if using.
  6. Bake for 25-30 minutes until sauce is bubbling and top is golden.
  7. Let cool for a few minutes before serving, and top with cilantro or avocado.
