For the Wrap
  • 4 pieces Tortillas Flour tortillas are preferred.
For the Topping
  • 1 cup Enchilada Sauce Mild or spicy, as per preference.
  • 1 cup Shredded Cheese Vegan cheese can be used.
  • 1/2 cup Fresh Onions Chopped for garnish.
  • 1/4 cup Fresh Cilantro Chopped for garnish.

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef for 5-7 minutes, stirring frequently.
  3. Stir in the taco seasoning along with ¾ cup of water to the cooked beef and let simmer for about 5 minutes.
  4. Warm the refried beans over low heat until spreadable, about 3-5 minutes.
  5. Spread a layer of refried beans on a tortilla, add beef mixture and cheese, and roll tightly.
  6. Place the rolled enchiritos seam-side down in a baking dish, pour enchilada sauce over, and sprinkle with remaining cheese.
  7. Bake in the preheated oven for 20 minutes until the cheese is melted and bubbly.
  8. Let rest for 5 minutes, then garnish with chopped onions and cilantro before serving.
