  • 1 tablespoon Ground Flax as an egg substitute
  • 1 1/2 cups All-Purpose Flour
  • 1 tablespoon Cornstarch
  • 1 teaspoon Baking Powder ensure freshness
  • 1/2 teaspoon Salt omit if lowering sodium
  • 1/2 cup Vegetable Oil or melted coconut oil
  • 3/4 cup Granulated Sugar consider coconut sugar
  • 1 cup Canned Coconut Milk or almond milk
  • 1 cup Orange (zested and juiced)
  • 1 teaspoon Pure Vanilla Extract homemade is best
  • 1/2 teaspoon Orange Extract optional
Frosting
  • 1/2 cup Vegan Butter or any plant-based butter
  • 2 cups Powdered Sugar mix in cornstarch to avoid clumping
  • 2 tablespoons Fresh Orange Juice
  • 1 tablespoon Orange Zest

Method
 

Cupcake Preparation
  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Mix ground flax with water and let sit for 5 minutes until gel-like to prepare flax egg.
  3. Whisk together flour, cornstarch, baking powder, and salt in a mixing bowl.
  4. In another bowl, mix together oil, sugar, coconut milk, orange juice, zest, and prepared flax egg.
  5. Gradually combine wet and dry ingredients, mixing gently until just combined.
  6. Pour batter into cupcake liners about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean. Cool before frosting.
  8. Prepare the buttercream by whipping vegan butter, powdered sugar, orange juice, and zest until creamy.
  9. Frost the cooled cupcakes with the orange buttercream and serve.
