Step‑by‑Step Instructions
  1. Prep Dried Cranberries: Combine cranberries with water in a microwave-safe bowl, heat for 30 seconds. Alternatively, soak in boiling water for 5-10 minutes. Drain and set aside.
  2. Make Sweet Spicy Pistachios: In a sauté pan over medium heat, melt butter. Add pistachios and sauté for 1-2 minutes. Mix in honey, chili powder, and salt and cook until golden and sticky. Spread on foil to cool.
  3. Assemble Salad: In a large bowl, add spinach, toss in ¾ of the strawberries, cucumbers, and red onion. Drizzle dressing and toss gently.
